Ingredients Needed:

  • 1 sponge cake
  • 3 ounces strong black coffee
  • 3 ounces brandy or rum
  • 1 1/2 pounds cream cheese
  • 1 1/2 cups superfine sugar
  • cocoa powder

How To Make Tiramisu?

  1. Slice the cake: Cut the sponge cake in half horizontally to create two layers, each about 1 ½ inches thick.
  2. Prepare the coffee mix: Stir the coffee and brandy (or rum) together. Lightly drizzle the mixture over the bottom cake layer without soaking it too much.
  3. Make the filling: In a bowl, beat the cream cheese and 1 cup of sugar until smooth and fluffy. Taste and add more sugar if needed.
  4. Assemble the tiramisu: Spread half of the cream cheese mixture over the bottom cake layer, then place the second layer on top. Spread the rest of the cream cheese mixture over the top.
  5. Add the final touch: Sprinkle cocoa powder over the top for a classic tiramisu finish.
  6. Chill and serve: Refrigerate for at least 2 hours before serving. Let it sit at room temperature for 20 minutes before slicing.

Recipe Tips:

  • Use fresh sponge cake: A soft and fresh sponge cake will absorb the coffee mixture evenly. If using store-bought cake, make sure it’s not too dry, or it won’t soak up the flavors well.
  • Don’t over-soak the cake: Too much coffee and brandy can make the cake soggy and cause it to fall apart. Lightly drizzle the mixture over the cake instead of pouring it.
  • Beat the cream cheese well: The cream cheese should be smooth and fluffy before spreading. If it’s too thick, let it sit at room temperature for 10 minutes and beat again to make it easier to spread.
  • Chill for at least 2 hours: Tiramisu needs time in the fridge to set and develop flavor. If possible, let it chill overnight for the best taste and texture.
  • Dust cocoa powder right before serving: Cocoa can absorb moisture in the fridge and lose its fresh look. For a perfect finish, add an extra dusting of cocoa just before serving.

How To Store Leftovers?

Let the tiramisu sit until it reaches room temperature. Then, cover it well and keep it in the fridge for up to 2 days. After that, it may get too soft.
