Ingredients Needed:

  • 1 1/2 cups all-purpose flour
  • 1 cup sugar
  • 3/4 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 teaspoon nutmeg

  • 1/4 teaspoon allspice
  • 1/4 teaspoon clove
  • ** Alternatively replace the spices listed above with a scant 2 teaspoons of pumpkin pie spice
  • 2 eggs 
  • 1/2 cup vegetable oil 
  • 1 cup pumpkin puree
  • 1/2 teaspoon vanilla
  • 1/3 cup roasted salted pumpkin seed kernels (pepitas)

How To Make Pumpkin Bread?

  1. Preheat the Oven: Set oven to 175°C. Grease a 9×5-inch loaf pan with nonstick spray.
  2. Mix Dry Ingredients: In a large bowl, sift together the flour, sugar, salt, baking soda, and spices.
  3. Combine Wet Ingredients: In another bowl, whisk the eggs, oil, pumpkin puree, and vanilla until smooth.
  4. Make the Batter: Gently mix the dry ingredients into the wet mixture. Stir just until combined—do not overmix.
  5. Bake the Bread: Pour the batter into the loaf pan, sprinkle the pumpkin seeds on top, and bake for 50–60 minutes. It’s ready when a toothpick inserted in the center comes out clean.
  6. Cool and Serve: Let the bread cool in the pan for 5 minutes, then transfer to a wire rack to cool completely before slicing.
