- Combine Wet Ingredients: In another bowl, whisk the eggs, oil, pumpkin puree, and vanilla until smooth.
- Make the Batter: Gently mix the dry ingredients into the wet mixture. Stir just until combined—do not overmix.
- Bake the Bread: Pour the batter into the loaf pan, sprinkle the pumpkin seeds on top, and bake for 50–60 minutes. It’s ready when a toothpick inserted in the center comes out clean.
