Cranberry Brie Bites

Cranberry brie bites are three ingredients: a mini phyllo shell, a cube of brie and a spoonful of cranberry sauce. They bake at 350F for seven to eight minutes. One package makes fifteen, and the whole thing takes thirteen minutes.

I use the frozen mini phyllo shells rather than cutting puff pastry, because they go in straight from the freezer with no thawing. Puff pastry works but it is a different recipe, not a swap: 375F for eighteen to twenty minutes instead of 350F for eight. The shells save half an hour.

Half a teaspoon of cranberry sauce per shell is the limit, because any more boils over and glues the shells to the tray. Runny sauce is the usual culprit, so drain whole-berry sauce on a spoon first. Overfilled bites also take longer to crisp underneath.

Assembled but unbaked, these freeze in their own tray for up to three months, which makes them the easiest thing to prepare weeks ahead. The brie rind can stay on, since it melts into the cheese and nobody notices it.

Ingredients

  • 4 oz brie cheese (half an 8-ounce wheel)

  • ½ cup cranberry sauce (see notes)

  • 1 package (1.9 oz) frozen mini phyllo shells, 15 shells

Directions

  • Heat: Preheat the oven to 350F and line a small baking sheet with parchment paper.
  • Cut: Cut the brie into ½ inch cubes, leaving the rind on or trimming it off as you prefer.
  • Fill: Put a cube of brie into each phyllo shell straight from the freezer.
  • Top: Add ½ teaspoon of cranberry sauce to each one, and no more.
  • Bake: Bake for 7 to 8 minutes until the cheese has melted, then serve warm or at room temperature.

These are simple enough that the questions are all about timing and what to do before the party.

FAQs

How much cranberry sauce do I actually need?

About two and a half tablespoons, not the half cup the ingredient list gives. Fifteen shells at half a teaspoon each comes to roughly a sixth of a standard can. Buy the small can and you will still have plenty left over.

Do the phyllo shells need thawing first?

No, and thawing them actually works against you. They go into the oven frozen and crisp as they bake, while a thawed shell softens and can collapse under the brie. Keep the tray in the freezer until the moment you start filling.

Jellied cranberry sauce or whole berry?

Whole berry looks better and holds its shape, which matters when the filling is this visible. Jellied works and melts into a smooth glaze, though it runs more and is likelier to spill over. If jellied is all you have, use slightly less.

Can I take them to a party?

Assemble with the brie only, carry them that way, and add the cranberry sauce once you arrive. Sitting with wet sauce on them softens the shells during the drive, which is the one thing that ruins them. Bake after you get there.

What if I want something bigger than a bite?

Scale up rather than out. Going to a whole baked brie puts the same two flavors in one dish and feeds a table rather than a tray. Bites suit a party where people stand, a baked wheel suits one where they sit.

What else goes on the table with them?

Anything cold, since these are the only hot thing you want to be timing. They sit well beside a vegetarian charcuterie board, which can be built hours earlier and then left alone. Keep the rest no-cook and you have one oven job.

The source ingredient list calls for ½ cup of cranberry sauce while its method uses about 2½ tablespoons across 15 shells. Its notes describe the puff pastry swap as needing “a few minutes” more, but the author’s own reply in the comments gives 375F for 18 to 20 minutes against the recipe’s 350F for 7 to 8. Nutrition is the source plugin’s automatic calculation and should be treated as an approximation.
