Ingredients
- For the Green Beans:
12 ounces green beans, trimmed
3 tablespoons olive oil
3 cloves garlic, grated
Kosher salt and freshly ground black pepper
- For the Stuffed Mushrooms:
One 14-ounce package stuffing mushrooms (14 to 16)
1/2 cup Italian-style breadcrumbs
1/4 cup finely grated Parmesan (about 1/2 ounce)
1/4 cup cream cheese (2 ounces), at room temperature
2 tablespoons fresh flat-leaf parsley, chopped
1 tablespoon olive oil
- For the Ham:
Nonstick cooking spray, for the foil
1/3 cup orange marmalade
2 tablespoons fresh orange juice
2 teaspoons cornstarch
1 teaspoon finely chopped fresh rosemary
Two 1-pound ham steaks, patted dry
- For the Rolls:
4 frozen brown and serve dinner rolls
1 tablespoon unsalted butter, melted
Directions
- Heat the oven: Set two oven racks in the middle of the oven and heat it to 375F.
- Start the green beans: Toss the green beans with the 3 tablespoons olive oil, garlic, 1/4 teaspoon salt and a few grinds of pepper on a sheet pan, spread them out and bake on the upper rack about 15 minutes, until they start to soften.
- Stuff the mushrooms: Pop the stems out of the mushrooms and scoop the caps clean. Mix the breadcrumbs, Parmesan, cream cheese and parsley, season with salt and pepper, and divide the filling between the caps.
- Glaze the ham: Line a second sheet pan with foil and spray it. Melt the marmalade in the microwave for about 45 seconds, then whisk in the orange juice, cornstarch, rosemary, 1/4 teaspoon pepper and 2 tablespoons water. Lay the ham steaks on the pan and brush both sides.
- Bake it all together: Push the beans to one side of their pan, add the mushrooms to the other and drizzle them with the remaining tablespoon of oil. Put the ham on the upper rack and the vegetables below, and bake 25 minutes, brushing the ham often. Add the rolls beside the beans, brush with melted butter and bake 10 minutes more.
FAQs
How long does this really take?
The card says twenty five minutes of cooking, but the method adds up to fifty. Fifteen for the beans, twenty five with the ham and mushrooms, then another ten once the rolls go in. The hour total is right, the cook time is not.
Why is it over a thousand calories a serving?
Because the number covers the whole plate, not one component, and it splits four ways across two pounds of ham. Cream cheese, breadcrumbs, Parmesan, butter and a roll stack up fast. Serve six instead of four and it lands near seven hundred.
Can I prepare any of it ahead?
Stuff the mushroom caps and mix the glaze a day early and keep both covered in the fridge. Trim the beans the night before too, so the only work left is arranging trays. Do not glaze the ham until it goes in, because the cornstarch sets as it stands.
Can I use a whole ham instead of ham steaks?
