Sweet Potato Casserole with Marshmallows

Whole sweet potatoes roasted until soft, scooped and beaten with butter, maple and cinnamon, then buried under a brown sugar pecan crumble. Marshmallows go on for the last few minutes only.

Ingredients

  • For the Filling:
  • 2 pounds sweet potatoes, cleaned

  • 4 tablespoons butter, melted

  • 1/4 cup milk

  • 1/4 cup packed brown sugar

  • 2 tablespoons maple syrup

  • 1 teaspoon cinnamon

  • 1 egg

  • 1 teaspoon vanilla

  • Cooking spray

  • For the Topping:
  • 1/2 cup packed brown sugar

  • 1/2 cup flour

  • 4 tablespoons butter, melted

  • 1/4 cup chopped pecans

  • 1 cup miniature marshmallows

Directions

  • Roast the potatoes: Heat the oven to 350F. Line a sheet pan with foil and coat it with cooking spray, prick the sweet potatoes with a fork and bake 45 to 60 minutes until tender. Let them cool enough to handle.
  • Mash the filling: Cut the potatoes open, scoop the flesh into a large bowl and add the 4 tablespoons melted butter, milk, 1/4 cup brown sugar, maple syrup, cinnamon, egg and vanilla. Mash or beat until mostly smooth.
  • Fill the dish: Grease a 9 inch square pan or 2 quart baking dish and spread the sweet potato mixture in evenly.
  • Add the streusel: Mix the 1/2 cup brown sugar, flour, 4 tablespoons melted butter and pecans until crumbly, then scatter it over the top. Bake 25 to 30 minutes until the topping has lightly browned.
  • Finish with marshmallows: Scatter the marshmallows over the top and return the dish to the oven for 3 to 5 minutes, until they are just melted. Serve immediately.
