Culver’s Stuffed Pepper Soup

Culver’s stuffed pepper soup is ground beef, four green bell peppers, fire roasted diced tomatoes, tomato sauce and beef stock simmered together for 30 minutes with cooked rice stirred in at the end. One pot, one hour, six servings.

Ingredients

  • 1 1/2 pounds ground beef

  • 4 large green bell peppers, diced

  • 1 large onion, chopped

  • 3 cloves garlic, minced

  • 28 oz can fire roasted diced tomatoes

  • 14.5 oz can tomato sauce

  • 2 cups beef stock

  • 1 cup cooked rice

  • 1 1/2 teaspoons dried basil

  • 1 1/2 teaspoons dried oregano

  • Salt and pepper, to taste

  • Shredded cheese, for garnish, optional

Directions

  • Brown the beef:Cook the ground beef in a large pot or Dutch oven over medium heat until browned. Remove and set aside.
  • Sauté the vegetables:In the same pot, cook the diced green peppers, onion and garlic until tender.
  • Build the soup:Return the beef to the pot. Add the fire roasted tomatoes, tomato sauce and beef stock. Stir to combine.
  • Simmer:Add the basil, oregano, salt and pepper. Simmer for about 30 minutes to let the flavours come together.
  • Add the rice and serve:Stir in the cooked rice. Taste, adjust seasoning, and serve topped with shredded cheese.
